Soave Superiore Classico D.O.C.G.
The vineyards are situated in the Soave Classico zone; yield per hectare: 100 quintals. To obtain this wine, the fruit from each vineyard is vinified separately in about mid-October depending on the ripeness of the harvest.
The grapes are pressed gently using special intermittent presses, with a light permanence on the grapes to the contact of the lees. The must is fermented in small barrels and in 15 hl barrels, where it remains for about one year.
Colour : intense yellow with greenish lights.
Aroma: full and complex with a slight hint of oak.
Taste: full-bodied, and lively with good length and a hint of almonds on the finish.
Alcohol content: 13% vol.
First courses, fish, shellfish, white meat and soft cheeses.
Serve in tulip-shaped goblets at a temperature of 12°C.
